These easy zucchini muffins are low carb, gluten, and dairy free. The chocolate chips make them even more delicious and they are perfect for a quick breakfast too.

Ingredients

Ingredients:

  • 2 cups of shredded zucchini
  • 3 eggs
  • 1 cup of almond flour
  • 5 Tbsp of coconut flour
  • 1/3 cup of [unsweetened applesauce
  • 1/2 cup of monk fruit sweetener
  • 2 tsp of cinnamon
  • 1/2 tsp of [almond extract
  • 1 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp salt
  • 1/2 cup of dark chocolate chips or more to suit your taste

Instructions

Instructions:

  1. Preheat the oven to 350 degrees
  2. Shred the zucchini into fine shreds and place into a large bowl
  3. Add the rest of the ingredients to the bowl
  4. Mix the ingredients well
  5. Place about three T of batter into lined or greased muffin tins
  6. Put the muffins into the oven and cook for approximately 22 minutes or until the tops of the muffins feel firm
