This past Sunday was Mother's Day! I hope you all got to celebrate a special day with one of the most important figures in our life. I know I did (: With some paleo zucchini bread and of course hugs and a few nice gifts.
Shopping
Prior to Mother's Day, my sister kept calling and texting me asking when I was going to come home. "Alayna, when are you coming home? I need to get mom a gift." Every Mother's Day or Father's Day, my sister and I go shopping together in order to get gifts or materials to make the gift. "I am coming home this weekend and we will go shopping Saturday!"
As promised, Saturday afternoon (after our weekly trip to the Farmer's Market), Kara and I hopped in the car. "Where do you want to go to get mom a gift and what do you want to get her?" Kara thought for a moment. "Chocolate. Mom likes chocolate." "Ok" I responded, "Did you want to make her a treat?" Her eyes lit up "YES!"
Once we got to the store, we both wandered around the aisles thinking about what special treat we could make our mom. Obviously, it had to involve chocolate. I started thinking about my mom's favorite treats and what she used to make us from recipes her mother shared with her.
Then it hit me. "Kara, lets make mom a healthy chocolate bread." We needed it to be a gluten and dairy free and so we found a chocolate paleo zucchini bread recipe to try.
Grandma
My grandma ALWAYS makes zucchini bread. She even has a special recipe for gluten free zucchini bread that is DELICIOUS which we all splurge on whenever she makes it.
But, I know my mom tries to stay away from high sugar, high carb foods. So, we decided to make a gluten free chocolate paleo zucchini bread similar to my grandma's recipe that is lower in carbs. Kara and I grabbed the zucchini, almond flour, eggs, unsweetened coco powder, honey, and eggs and headed back home.
Sunday morning, Kara and I both got up at 6 am before my mom woke up to make her her Mother's Day treat. Kara, being one of the best helpers there is, set all the ingredients we needed on the counter. Together, we grated the zucchini, measured all of the ingredients, mixed them together, and put it in the oven.
Paleo Zucchini Bread in the Oven
About 10 minutes after the chocolate zucchini bread was in the oven, my mom came downstairs.
"Mom," Kara said. "Don't look in the oven. It is a surprise." My mom laughed as we gave her a hug and said Happy Mother's day and gave her our other gifts that went along with the chocolate zucchini bread.
Once the bread was done, we pulled it out of the oven. My mom was thrilled. "I have a healthy treat that is something different that I can pack every day with my lunch!" She cut a slice and shared a piece with us. Boy, was it good.
And Now for the Recipe:
As you know this recipe is packed with nutrition. The zucchini has several health benefits as does the collagen peptides we added. The container talks about how good this stuff is for hair, nails, and skin as well as joints.
This brand is high quality and paleo friendly, gluten and dairy free. There is also no real odor or taste so it was easy to add to this recipe.
My mom has been using this since she had lyme and says it really helps so we found a really tasty way for her to include some of it in her daily diet.
Gluten Free Chocolate Paleo Zucchini Bread Recipe
Ingredients:
1 1/2 Cups of Shredded Zucchini
3 Eggs
6 Tbsp of Almond Flour
4 Tbsp of Powdered Collagen
5 Tbsp of Unsweetened Dark Chocolate Cocoa Powder
6 Tbsp of Honey or Maple Syrup
2 Tbsp of Almond Butter
1/2 Tsp of Salt
1 Tsp of Baking Powder
Instructions:
- Preheat the oven to 350 degrees and line a 9x5 loaf pan with parchment paper. Spray the pan and parchment paper with Coconut Oil Cooking Spray.
- In a small bowl, combine the eggs, almond flour, and honey (or maple syrup). Whisk until well combined.
- In a medium bowl, combine the shredded zucchini, almond flour, collagen, cocoa powder, salt, and baking powder. Stir until well mixed.
- Slowly mix the egg mixture in with the zucchini mixture. Stir until well combined.
- Pour the batter into the 9x5 loaf pan and place in the over for approximately 45-50 minutes
- Let the bread cool before slicing

This looks like a really easy to make paleo zucchini bread recipe. I must try it! I must admit that i love zucchini bread.
This is such an interesting recipe! I’ve never baked with powdered collagen before I think I will give it a shot.

My mother-in-law makes us a big batch of zucchini bread every year. Wonder if she’s ever tried to adapt it to something like this?!
I’ve never had nor attempted to make zucchini bread. My mom loves the stuff but seeing how zucchini is not only of my favorite vegetables I’ve been a little afraid to try it. Does it taste like zucchini?
It does not taste at all like zucchini! It tastes like moist chocolate cake actually with a little different texture. We really liked it! 🙂
The ingredients are all yummy so no doubt this loaf of bread would turn out delicious! I will save this recipe and make some paleo zucchini bread this weekend. This is just proof that eating healthy does not mean bland food!

This would be a great way to “sneak in” vegetables into a child’s diet. I have never tried making zucchini bread before. My kids are not picky eaters but I can just imagine the surprised look on their faces when I let them know that the loaf has zucchini in it. 🙂
