This delicious low carb soup can be served cold or hot-either way it's fresh, simple and great for a quick and healthy dinner!
Before summer leaves us, why not try this wonderful cold soup? Wait-don't leave yet. If you're reading this and the weather is cool already, it's okay!
This low carb soup is just as delicious served hot. We have made it a few times now and take a little different twist each time.
For a dairy free version, just skip the ricotta.
For a change of pace, mozzarella or even cheddar goes well with this recipe.
If you need a more substantial dish for dinner, simply add some bits of already cooked chicken.
Either way, the beautiful healthy red pepper, tomato, and parsley make it a very healthy option.
Grilled Red Pepper Low Carb Soup
How to Grill and Peel the Peppers and Tomato
You're going to want to preheat your grill to medium/hot setting-each grill is a little different so you'll have to use your judgement a bit here.
Now, in order to prepare your tomatoes for grilling, we do the obvious things like wash and take off any stickers.
You can grill them whole but removing the seeds after is a little less convenient. So, we cut them in half around the center.
For the tomatoes, we removed the watery insides and seeds with our fingers.
With the peppers, we removed the seeds inside before grilling as well.
Following the recipe, you grill 10-15 minutes until the skins turn very dark in color.
Once the peppers and tomatoes have been grilled on your gas grill you will need to set them in a heat safe dish with a cover to let them steam for a bit.
When they're cool enough to touch, you can peel the skins off quite easily.

Red Bell Peppers are reported to host a myriad of health benefits. They are packed with nutrition, containing vitamin C, vitamin K, B6, and folate. Vitamin C is known for it's immune system support ability. The antioxidants in them help protect our cells from harmful free radicals.

Like the red pepper, tomatoes have lots of great nutrition. Tomatoes contain vitamin C, vitamin K, potassium, and folate. Potassium is an important electrolyte with it's own list of many benefits. So you can just imagine tomatoes are full of antioxidants as well.

Easy Roasted Red Pepper Low Carb Soup
You can serve this easy and versatile, soup cold or hot, add chicken for more substance, or take out the ricotta if you're dairy free.
- 2 large red peppers
- 1 large tomato
- 1 tsp of balsamic vinegar
- 2 tbsp tablespoon of olive oil.
- 2 teaspoons of ricotta
Start grill and preheat.
Wash the peppers and tomatoes and remove any stickers.
Cut them in half around the center and remove seeds from insides.
Grill the peppers and tomato under the grill, about 15 to 20 minutes.
Put them in a heat safe covered dish to let cool.
- Peel the peppers and tomato.
Blend tomato and peppers until a smooth and homogeneous preparation is obtained.
- Add vinegar and olive oil.
Add salt and pepper.
- Mix again for a few minutes.
Keep cool at least one hour before serving. Or if you want hot soup, heat to desired temperature.
- Garnish with parsley and ricotta.
