We simply put some olive oil on the bottom of the slow cooker and add our chicken thighs.

Read carefully because the following is so easy, you’ll think you missed a step.
Add the lemon juice, chicken stock, and then the spices.
Notice that we included basil and garlic.
Both of these super spices have amazing health benefits.
These benefits include things like having anti-inflammatory and antimicrobial properties as well as antioxidants.
Next, add the lemon zest on top.
And guess what? You’re about done, really.
Because now all that’s left is to cover the pot and set it to low.
This will cook all on its own for 4-6 hours while you are off doing your thing.

When you get home and peek in the crockpot, this is what you’ll see.

Now, for the hard part.
You must insert a meat thermometer into the chicken just to check for a safe cooking temperature of at least 165 degrees F.
Take the thighs out and put onto your plates and garnish then serve.

Lemon Basil Chicken Thigh Crockpot Recipe
This tasty chicken can be started early, left to cook, and with just a few moments of plating and garnishing, served up as a beautiful and healthy meal.
- 1 1 ½ to 2 pounds package boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1 lemon zested and juiced
- 1 teaspoon dried basil
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ½ cup chicken stock
- Fresh basil optional
- Pour olive oil in the bottom of the slow cooker crock and swirl to coat OR spritz with non-stick cooking spray.
- Lay chicken thighs in the slow cooker crock. Pour the lemon juice over the chicken. Then add the chicken stock.
- Sprinkle each chicken thigh with dried basil, garlic, and pepper. Drop lemon zest on top.
- Cover and cook on low for 4 to 6 hours, depending on the thickness of your chicken thighs.
- Remove chicken from slow cooker and garnish with fresh basil.
Notes: Although the fresh basil is optional, it adds so much flavor that I personally would not skip it. This recipe can be easily doubled or tripled but packing the slow cooker may increase the cooking time. Check your chicken for an internal temperature of 165 degrees prior to serving.
