Keto Blueberry Cheesecake Recipe
Making the Crust for the Keto Cheesecake:
Coconut in it’s many forms can be so versatile in baking. For this Crust, I used unsweetened coconut (dessicated). It is basically just coconut that has been grated into small pieces and then dried. Coconut helps balance blood sugar which is obviously critical for success on a keto diet. Coconut contains the medium chain triglycerides or MCT oil which is helpful for helping to burn fat as well.
When it comes down to the sweetener you choose, erythritol can be used with success but if you have digestive trouble with it like I do, you can opt for a mix of that and stevia or monk fruit too.
The butter helps bind the crust.
For the Filling:
You will want to use the full fat cream cheese for the filling or the cake will not have the right consistency. Just beat that until smooth per the recipe instructions, add then add the low carb sweetener and lemon.
You will have a separate bowl so you can whip the heavy cream until becomes stiff. This can actually take 5 or more minutes.
You will be folding the whipped cream into the cream cheese mixture and adding the blueberries gently so that they don’t mush up too much.
Coconut Based Crust
When making keto cheesecake you typically use a spring form cake pan. You will definitely need to grease that pan with the coconut oil on the inside and then put some parchment paper over the bottom.
We recommend adding the mixture into the pan with your hands to minimize any of the batter sticking to a utensil. You simply push the coconut mixture around the sides and bottom and then bake per instructions.
Put it Together:
Once the crust has been cooled, you can add in the filling in and put in the refrigerator to chill. For best results, chill for at 4 or more hours.
The cake looks really nice with a few blueberries (but you could also use other berries) placed along the outside edges of the crust. I like to hand pick the best looking ones of the batch I have and save them for the topping.

Blueberry Keto Cheesecake Recipe
For the Crust;
- 3 cups unsweetened coconut flakes
- ¼ cup low carb sweetener like monk fruit
- 2 egg whites
- ¼ cup melted butter
- 1 tsp. coconut oil
For the Cheesecake Filling;
- 24 oz cream cheese
- 2 cup low carb sweetener like monk fruit
- 1 cup heavy whipping cream
- lemon zest from 1 lemon
- 3 tablespoons lemon juice
- 1/2 pint Fresh Organic Blueberries
Use parchment paper to line the bottom of the pan and use the coconut oil to grease the inside of the spring pan to prevent sticking.
Preheat the oven to 350 degrees F.
Mix the coconut, butter, egg whites and sweetener in a bowl.
Place the crust mix into the pan and press the coconut mixture into the pan evenly (you can use a little water if needed)
Bake for 20 to 25 minutes until done (golden color)
Take out of the oven to cool.
Use a beater to soften the cream cheese.
Next, add in the lemon zest, lemon juice, and low carb sweetener.
Take a few minutes to whip your heavy cream until it forms stiff peaks, and afte that, you will gently mix this in with your cream cheese mix.
Put a few of the blueberries in and mix gently.
The filling can now go into the crust and you can chill the keto cheesecake for a few hours.
Top with the rest of your whole colorful berries and enjoy!
