Make sure your bananas are brown and speckled.
Bananas are sweetest when their skin has turned brown.
This makes the banana bread extra sweet without the need for added sugar!
When the bananas are still yellow, you are getting more starch than sugar.
The different colors of bananas do not change the amount of calories in a banana
(a green, a yellow, and a brown medium banana all have about 110 calories).
What changes is whether the banana is composed of more starch or more sugar. Green bananas are more starchy and brown bananas are more sugary.
Brown or speckled bananas are also softer which makes them easier to mash.
Line the pan with parchment paper.
The first time I tried the recipe, I used coconut oil to grease the pan to avoid the bread from sticking.
This option helps, for the most part. However, I still found it hard to take the bread out of the pan without loosing some of the bottom and sides.
Therefore, I recommend lining the pan with parchment paper.
This will allow you to just pull the bread out of the pan and prevent any part of it from sticking.
Make sure you stir the apple cider vinegar well into the batter to allow it to react fully with the baking soda.
Store the banana bread in the fridge for freshness. It can also be placed in the freezer

Paleo, Gluten Free Dairy Free Banana Bread
This literally tastes just like the banana bread recipe my grandmother makes.
- 3 Ripe Bananas
- 2 Cups Almond Flour
- 1 tsp Stevia
- 1 tsp Vanilla
- 2 tsp Cinnamon
- 1 tsp Baking Soda
- 1 tsp Apple Cider Vinegar
Preheat the oven to 350 degrees
Line a loaf pan with parchment paper
Peel the bananas and place them in a large bowl.
Mash the bananas with the fork.
Slowly add the almond flour to the mashed bananas.
Add the stevia, vanilla extract, and cinnamon. Mix well.
Add the baking soda and immediately add the apply cider vinegar. Mix well to ensure the vinegar reacts with the baking soda.
Pour the batter in the pan and level the batter.
Place the banana bread into the oven and bake for approximately 45 minutes.
Once cooked, let cool for approximately 10-20 minutes.
