Low carb mac and cheese-I don’t know why, but I have been CRAVING Mac & Cheese lately.
Low Carb Mac and Cheese with Caulifower and Chicken
When I was a kid, I used to love the gooey, creamy, cheesy covered pasta dish.
I am not going to lie, I have been extremely anxious and stressed lately with work and school deadlines looming over my head.
Not only that, but I ran a couple big races this month (recently ran the Cherry Blossom 10 Miler and ran a personal best! (Stay tuned for my next training tips post!).
All of this chaos was making me reminisce over my childhood and how easy life was. The nostalgia is probably what was causing me to crave Mac & Cheese. It is comforting and brings me back to my childhood.
Cashew or Almond Milk
Daiya Dairy Free Shredded Cheese
Add Chicken to the Low Carb Mac and Cheese
- Dice up the cauliflower and chicken into bite sized pieces
- Steam the cauliflower until well cooked, set aside in a bowl along with the chicken
- Place the cashew milk and shredded cheese in a small pot and simmer until the cheese is melted, stirring frequently
- Once the cheese has melted, pour the mixture over the cauliflower and chicken
