My sister loves pad Thai and on busy days, she goes for this quick and convenient microwave meal which we find at our local grocery store.
We also drive by one of my old favorite restaurants on our way to church each week. It is a Vietnamese place with great food and their ingredients are fresh and healthy. They make the best Pho Soup I have ever had.
When I found out I had a significant sensitivity to soy, gluten, and diary, most if not all of their menu items were off the choice list for me.
In an effort to satisfy me and my sister’s cravings for Thai flavor, while also helping my sister use the microwave less, we decided to go ahead and make this Gluten and Dairy free dish and we are very happy with it.
Our first step was to locate a good solid pad Thai recipe online that we could adapt to our multiple food sensitivities. After some time, we found one in an old cookbook and modified it extensively until we found a blend that we liked.
I have more than one food sensitivity and so do my other family members. My mother used to eat everything until she got so sick with Lyme disease. While healing, and even still she has to remain free of certain foods that cause inflammation for her. You can read more about that here.

We love squash-all kinds! We use spaghetti squash a lot in place of “pasta” in many recipes already. It is pretty easy to bake. You just cut it in half lengthwise and scoop out the seeds. Toss it in the oven in a glass baking dish and follow the recipe directions for specifics. It’s best to cook it early enough to allow for some cooling time. Shredding the squash with a fork into spaghetti hurts when it’s too hot.
I was a little skeptical that we could make a sauce that tasted good without using red pepper flakes (nightshade) or soy sauce.
So, we used coconut secret in place of soy sauce and and black pepper for a little spice in our Gluten and dairy free Thai Style Spaghetti Squash with Chicken. You could make this same recipe for Gluten and Dairy Free Thai Style Spaghetti Squash with Chicken, using other low carb noodle products. The almond based noodles, Cappellos brand, are very much like real pasta in consistency and flavor. If you try zucchini noodles using the spiralizer, then it may be too soupy since the zucchini is pretty watery by nature.
- Preheat the oven to 425 degrees
- Cut the spaghetti squash in half and lay face down in a pan
- Cook for 45 minutes
- While the squash is cooking, season the chicken breasts with salt and pepper
- Grill or pan fry the chicken until it is well done
- When the squash is done, let cool then shred
- For the sauce, combine the lime juice, coconut secret, onion powder, garlic powder, and dried cilantro and mix
- When it is time to eat, place a serving size of spaghetti squash in a dinner bowl, drizzle with the sauce, and top with the chicken
- You can also top with bean sprouts and peanuts if you like
